Spring officially arrives on Monday, March 20, 2024. The featured image here, is the crocus; our first sign of Spring in Upstate, NY. It celebrates the rebirth from a long Winter. They emerge even through some leftover snow laden paths. Ahhh what a welcome they are!
I don't know how many of you feel about culinary tasks during the non-winter months, but I tend to want something yummy but with a quick preparation. That seems to be key for me. So, I came across a really simple and delicious morning coffeecake. I must admit I haven't made it exactly as written, so here is what I did a little differently. I put the topping on before it was partially baked as written and I also, didn't have much half n half for the topping on hand which I think it this change. may have improved it a bit.
I used not even a tablespoon, and once I made it I didn't put any in at all of the half n' half. I just evenly sprinkled the firm-ish topping all over the top of the cake before baking, as mentioned before. However, it did sink into the cake, which made for wonderful treasures to be found inside. Also, I baked it in a 8" square pan, so it had more height, and we really liked how it turned out!! We, I say we, as my husband and I enjoyed this cake one morning and I made it again before a visit to a dear relative. She LOVED it too!
So there you have it, a quick recipe so that you're not tied down in the kitchen long and can enjoy the outdoors now that it's almost that time of year for us non-skiers.
